VG10 Damastmesser: Vorteile von 67 Lagen Damaststahl erklärt

Why our knives are top of the range

🔪 VG10 core steel with 67 layers of Damascus steel – Why our cutting knives are among the best in their class

In the world of high-quality kitchen knives, one thing above all else determines quality, cutting performance, and enjoyment when cooking: the steel.
At SKeld® - Cutting Knife, we deliberately use one of the best knife steels in the world – VG10 core steel, encased in 67 layers of Damascus steel.

But what makes VG10 so special?
Why is it perfect as a core steel for kitchen knives?
And how does it compare to classic carbon steel or simple stainless steel?

What is VG10 steel?

VG10 is a high-alloy, premium stainless steel from Japan that was originally developed for high-end cutting tools. Today, it is considered the gold standard for high-quality kitchen knives.

Typical alloy components:

● Carbon (~1.0%) → extreme sharpness & cutting durability

● Chromium (~15%) → high rust resistance

● Molybdenum & vanadium → fine microstructure & high hardness

● Cobalt → improved heat treatment & stability

The result:
👉 A hard, fine-grained steel with exceptional cutting performance

Why VG10 is the perfect core steel for kitchen knives

The core steel is the heart of a knife – this is where the cutting edge is created. VG10 offers decisive advantages here:

🔪 Extreme sharpness

VG10 can be ground to an extremely fine edge – ideal for precise cuts in meat, fish, vegetables, or herbs.

⏳ Outstanding cutting performance

Thanks to its hardness of 60–62 HRC, the cutting edge stays sharp significantly longer than conventional steels.

🛡️ Rustproof & easy to maintain

Unlike carbon steel, VG10 does not require constant oiling and does not discolor.

⚖️ Perfect balance of hardness & toughness

Hard enough for long-lasting sharpness – but not brittle. Ideal for everyday kitchen use.

67 layers of Damascus steel – protection, stability & design

Our knives are not only made of VG10 – the core is surrounded by 67 layers of Damascus steel.

Advantages of the Damascus coating:

● Increased break and impact resistance

● Protection of the hard core

● Characteristic Damascus grain – each knife is unique

● Optimal balance and comfortable cutting feel

➡️ The best of both worlds:
High-hardness core + flexible outer layers

The manufacturing process of our VG10 Damascus knives

1. Selection of VG10 core steel

2. Coating with 67 layers of Damascus steel

3. Fire welding & multiple folding

4. Precise heat treatment

5. Hardening to optimal HRC values

6. Fine grinding & polishing

7. Final inspection by hand

Precision. Craftsmanship. Perfection.

Every knife from SKeld® - Cutting Knife is created in a complex, multi-stage process. The aim is to combine the exceptional properties of VG10 core steel with the stability and beauty of 67 layers of Damascus steel.

1. Selection of VG10 core steel

The heart of the cutting edge

The first step is to select a particularly pure VG10 premium steel. This Japanese high-performance steel is known for its fine-grained structure, high hardenability, and excellent sharpness.

Only VG10 with a precisely controlled alloy is used, as even minimal deviations would affect the subsequent cutting performance. The core steel later forms the actual cutting edge – this determines how sharp, durable, and precise the knife will be.

Result:
✔️ Maximum sharpness
✔️ Exceptional edge retention
✔️ Rust-free performance in everyday kitchen use

2. Coating with 67 layers of Damascus steel

Protection & stability

The hard VG10 core is now coated on both sides with 67 layers of Damascus steel. These outer layers consist of different alloyed steels, which specifically provide flexibility and resistance.

The cladding protects the highly hardened core from breakage, increases the stability of the blade and at the same time ensures a harmonious balance when cutting.

Result:
✔️ High fracture resistance
✔️ Pleasant cutting feel
✔️ Durable blade construction

3. Fire welding & multiple folding

Damascus steel perfection

During fire welding, the core and outer layers are permanently bonded together under extreme temperatures. Multiple folding and forging creates the characteristic damask structure.

Each folding process refines the steel structure, distributes tension evenly, and strengthens the mechanical properties of the blade.

Result:
✔️ Distinctive damask grain
✔️ Optimized steel structure
✔️ Each knife is unique

4. Precise heat treatment

Precise control

Heat treatment is one of the most sensitive steps in the entire process. The blade is heated and cooled again in a controlled manner to release the full potential of the VG10 steel.

This step significantly determines hardness, toughness, and cutting stability. Experience and precision are crucial here—even the smallest deviations would impair quality.

Result:
✔️ Uniform material structure
✔️ Optimal balance between hardness and flexibility
✔️ Long-term cutting performance

5. Hardening to optimal HRC values

Performance that lasts

After heat treatment, the blade is hardened in a targeted manner. Our VG10 Damascus knives achieve a hardness of approx. 60–62 HRC – ideal for kitchen knives.

This hardness range enables an extremely sharp cutting edge without becoming brittle. The knife stays sharp for a long time and is also suitable for everyday use.

Result:
✔️ Extremely long cutting durability
✔️ High cutting precision
✔️ Safe working without breakouts

6. Fine grinding & polishing

Sharpness you can feel

Now the blade receives its final grind. In several grinding stages, the cutting edge is precisely shaped and ground to an extremely fine finish. The surface is then polished to impressively highlight the Damascus structure.

This step determines how effortlessly the knife glides through food.

Result: ✔️ Razor-sharp cutting edge ✔️ Low cutting resistance ✔️ Elegant, high-quality appearance

7. Final inspection by hand

Quality without compromise

Each knife is then inspected by hand. Inspection of:

● Sharpness

● Blade geometry

● Balance

● Surface finish

● Damascus pattern

Only knives that fully meet our high quality standards leave the factory.

Result:
✔️ 100% quality control
✔️ Perfect workmanship
✔️ A knife that inspires
